The Valley of Aromatic Spices

Nestled in the Himalayan mountains, Kashmir has developed a culinary identity quite different from the rest of India.

Its cooking is renowned for fragrant spices, deeply coloured sauces and carefully balanced aromatics. Rather than relying on intense chilli heat, many Kashmiri dishes build their character through the subtle combination of fennel, dried ginger, cardamom and cloves.

One of Kashmir's most celebrated culinary traditions is Wazwan, an elaborate multi-course feast associated with Kashmiri Muslim hospitality, in which carefully prepared meat dishes take centre stage.

The Distinctive Spices of Kashmir

Kashmiri cooking uses a particularly recognisable collection of spices.

Kashmiri chilli provides a striking red colour with relatively gentle heat. Fennel contributes a subtle sweetness and aniseed aroma, while dried ginger introduces a warm, slightly sharp character.

Cardamom, cinnamon and cloves add fragrance and depth, particularly in slow-cooked meat dishes.

Together, these spices create curries that are richly aromatic without necessarily being fiery.

The Art of Kashmiri Cooking

Traditional Kashmiri cuisine includes several distinct cooking styles, from elaborate Wazwan preparations to the everyday dishes of Kashmiri Pandit households.

Some preparations use yoghurt to create richness and a gentle acidity, while others rely on carefully balanced spices and slow cooking to develop their sauces.

The defining feature is often the relationship between aroma, colour and texture rather than the sheer intensity of the heat.

At Sambhara, our Kashmiri-inspired dishes use a separately prepared regional spice concentrate to bring these characteristic aromatics into the finished curry. Our approach draws inspiration from the region while adapting the cooking process to our small-batch kitchen.
