A Culinary Tradition Built on Aromatic Spices
In the southern Indian state of Tamil Nadu lies Chettinad, a region renowned for one of India's most distinctive culinary traditions.
The cuisine is closely associated with the Nattukottai Chettiar community, historically known for its extensive trading networks across South and Southeast Asia.
These connections helped shape a cooking tradition celebrated for its sophisticated use of spices, particularly the roasting and grinding of whole spices to create intensely aromatic masalas.
Chettinad dishes are often described as fiery, but their defining quality is not simply chilli heat. It is the extraordinary complexity created by combining spices with different aromas, textures and levels of warmth.
The Distinctive Spices of Chettinad
Black pepper is particularly important, contributing a sharp, penetrating warmth that differs from the heat of red chillies.
Fennel seeds provide a sweet, aromatic note, while coriander and cumin add earthy depth.
Cloves, cinnamon, cardamom and star anise introduce further layers of fragrance, creating the characteristic complexity of many Chettinad spice blends.
Some preparations also incorporate roasted coconut, which adds richness and a gently nutty character.
The precise combination varies considerably between dishes and households, but the careful selection and preparation of whole spices remains central to the cuisine.
The Art of Roasting and Grinding Spices
One of Chettinad cooking's defining techniques is the dry-roasting of whole spices before grinding them into a masala.
Heat releases aromatic compounds within the spices, changing their fragrance and bringing out deeper, more complex flavours.
The roasted spices are then ground, sometimes with coconut, to form a paste or powder that becomes the foundation of the dish.
This method produces a markedly different character from curries made primarily with pre-ground spices.
At Sambhara, our Chettinad-inspired dishes use a separately prepared spice concentrate developed around these characteristic roasted aromatics.
Combined with our cooking bases, it allows us to create the distinctive peppery warmth and layered spice character associated with the region.
